This could be one of my favorite recipes to date. So easy, filling and full of flavor! My inspiration came from "pinning" this Sausage Zucchini Boat but I decided to do my own take on it using eggplants and ground turkey.
2 whole egg plants
1 pound ground turkey
Preheat oven to 400F
Slice eggplants lengthwise and scoop out the insides (save for later)
Drizzle eggplants in olive oil and roast in the oven for 20 minutes
Meanwhile cook ground turkey on stove top and add in diced zucchini (that you previously removed)
Remove eggplants from oven and top with turkey mixture, 2 tablespoons of sauce, and cheese.
Cover and place back in the oven for another 10-15 minutes until cheese is melted
